Looking for a quick dinner idea that’s delicious and flavorful. This vegan beefless tip stew is plant based comfort food at its best. Chalk full of veggies in a savory broth that warms your belly, this recipe is fun and easy to make.

This classic dinner staple can be made quickly with an Instant Pot. In under 15 minutes, you can enjoy this hearty belly warming plant based delicious dinner. You can absolutely let it simmer on the stove for 45 minutes and let the flavors intensify. Either way, you’ll be blown away by how delicious this recipe is.

INGREDIENTS

You should be able to find all these ingredients at you local grocery store. 

  • Celery: I like to cut the celery in large pieces. 
  • Onion: Red, yellow or white. Your choice.
  • Mushrooms: Regular, portabello or shiitake. Take your pick. 
  • Carrots: Baby or regular carrots both work well in this dish. 
  • Red potatoes: You can also use regular white potatoes as well. 
  • Tomato Paste: Just a little is all you need. 
  • Vegetable broth: I usually make my own broth, but I used boxed broth for convenience a lot of the time. 
  • Gardein Beefless Tips: In my humble opinion these are the best plant based beef tips on the market. 

SEASONINGS

  • Salt
  • Pepper
  • Soy sauce
  • Brown sugar
  • Minced garlic
  • Italian seasoning

HOW TO MAKE

  • 1. Dice onion and celery. Cut carrots. Cube potatoes. 
  • 2. In a large pot over medium heat, add olive oil, minced garlic.
  • 3. Add onion, celery, and carrots. Saute for 5 minutes.
  • 4. Add mushrooms. Season with salt, pepper and Italian seasoning. Mix well. 
  • 5. Add vegetable broth, soy sauce, tomato paste and brown sugar. Add beef tips. Stir well.  
  • 6. Cover and simmer for 25 minutes or until carrots and potatoes are tender. 
  • 7. Serve and enjoy.

  • 9 oz pack of Gardein beef tips
  • 10 baby carrots, cut in half
  • 6 baby red potatoes, cubed
  • 8 oz pack of shiitake mushrooms
  • 3 celery stalks, cut
  • 1/2 onion, diced
  • 3 tbsp olive oil
  • 1 tsp sal1 tsp pepper
  • 1 tsp minced garlic
  • 1 tsp Italian spices
  • 2 cups vegetable broth
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar

INSTRUCTIONS
