10 MINUTE CHICKEN FRIED RICE

QUICK CHICKEN FRIED RICE

Who doesn’t love fried rice? It has to be one of the most ordered items in take-out history. This recipe is quick, easy, delicious and way better than take-out. It’s easy to make and clean up is quick as well. In 10 minutes you’ll have dinner on the table the whole family will love.

Looking for an easy dinner mid-week or a quick weekend lunch. This is it. Rather than pick up the phone and order delivery, chicken fried rice can be on the table in 10 minutes. It’s so delicious and fresh, there won’t be any leftovers.

INGREDIENTS

You will have dinner on the table in no time with this easy to execute, delicious and fast chicken fried rice recipe. 

  • Rice: Any rice of your choice. Brown or white will work. 
  • Just Egg: You will be surprised how this cooks like real eggs. 
  • Mixed Vegetables: Frozen mixed vegetables are very easy to find and inexpensive. 
  • Plant Based Chicken: There are many brands on the market. I love this MINDFUL CHIK’N. It’s perfect for recipes that call for chicken. 

SEASONINGS

Less is more when it comes to seasoning the fried rice. 

  • Salt: A pinch will do you.
  • Pepper: Ground pepper if you have it. 
  • Garlic: Fresh is always best but I always have minced garlic on hand. 
  • Ginger: I use a lot of fresh ginger in my juices. I keep the squeeze bottle on hand for when I run out. 
  • Sesame oil: This oil brings all the flavor. 
  • Soy sauce: Gluten free soy sauce is the one I use. Low sodium is also a good choice.

HOW TO MAKE

  • 1. Cook frozen mixed vegetables according to directions on package.
  • 2. Cook rice according to directions on package.
  • 3. Set aside when done.
  • 4. Drain mixed vegetables and put them aside.
  • 5. Put cooked rice to the side.
  • 6. Heat wok or pan, add sesame oil, ginger and garlic. 
  • 7. Add mixed vegetables to pan or wok. 
  • 8. Season with onion powder, salt and pepper.
  • 9. Add 1 cup of Just Egg and cook until eggs are friend hard. 
  • 10. Add plant based chicken and stir.
  • 11. Add rice and mix well. 
  • 12. Season with soy sauce.

  • 1 tbsp sesame oil 
  • 1 tbsp soy sauce
  • 1 cup of Just Egg
  • 2 cups of cooked rice
  • 2 cups of frozen mixed vegetables 
  • 1 package of plant based chicken
