In this 3-day meal plan, I’ll walk you through a simple and affordable plant-based haul I picked up at Sprouts Market. From where I shop to what I bought to how much it cost, this meal plan will show you how easy it is to add plant based meals to your rotation.

SHOPPING

If you’re looking for a simple, delicious meal plan that’s as nutritious as it is easy to make, this three-day plan has got you covered! 

With fresh blueberries, avocado and scrambled eggs for breakfast, a vibrant juice blend that’s equal parts refreshing and bold, a salad recipe that’s quick and packed with flavor for lunch, and the always-satisfying mushroom chowder to wrap up the day—every meal is a treat.

This three day meal plan yielded some really good food. Total spent was $82.92 but that includes the fruits and vegetables for the juice, which is optional.

BREAKFAST. This trio promotes heart health, boosts energy, and aids in digestion. With under 300 calories for the entire meal.

JUICE (OPTIONAL). This tropical fruit is low in calories and high in antioxidants, making it an ideal choice for a hydrating and energizing juice.

LUNCH. Beyond its good looks, this recipe is packed with nutrition and convenience

DINNER. Creamy goodness in a bowl that is packed with nutrient-dense ingredients.

BREAKFAST

Start your morning off with a delicious and nutritious breakfast that features creamy fresh avocado, antioxidant-rich blueberries, and a hearty serving of Just Egg vegan scrambled eggs. The avocado provides healthy monounsaturated fats, fiber, and essential vitamins like E and K, while the blueberries add  a natural sweetness packed with antioxidants and vitamin C to support immune health.

Rounding out the plate are scrambled Just Egg, a plant-based protein powerhouse made from mung beans, offering around 7 grams of protein per serving and essential amino acids to keep you satisfied and energized. Not only is this breakfast quick to prepare, but it also delivers a well-balanced mix of nutrients to support your wellness goals. Together, this trio promotes heart health, boosts energy, and aids in digestion.

JUICE (optional)

Pineapple and cantaloupe juice is a refreshing, nutrient-packed combination that offers a variety of health benefits.
